Just a quick question: Is there a way to play GoldenEye Source offline? You know, so I can just run through all the levels and check out all the guns without people coming in the server and asking me to play a game?

yeah, type map in console and you will be have a list of choices.

example,

map ge_facility
map ge_control
map ge_caves

to run map.
